For the Salad

3 figs, quartered
20 gr of blueberries
100 gr of paneer cheese, cut in cubes
10 mint leaves
Half an avocado, sliced
10 gr of pistachio nuts
Handful of mixed salad like watercress, baby spinach, pea shoot
4 cherry tomatoes
Half a nectarine, sliced

For the Sauce

40 gr of raspberries
4 teaspoons of extra virgin olive oil
Crush the raspberries well, add extra virgin olive oil, mix it well

Method

  • Arrange the vegetables, fruit and berries on the plate.

  • Top it with paneer cheese and nuts and pour over the raspberry sauce.

  • Season to taste.
