Chickpeas and Eggs on Sourdough

1 – 2 boiled eggs (runny or hard, as you prefer)
2 slices of sourdough
50 gr of cooking chorizo
Half a can (120g) of chickpeas (drained)
Handful of your favourite greens, like watercress or pea shoots
1 teaspoon of butter for cooking
Seasoning of your choice eg: salt &pepper, chilli flakes, smoked paprika

Method

  • Melt the butter in a pan and lightly fry cubes of chorizo until sizzling.

  • Add drained chickpeas to the pan, season with smoked paprika (optional).

  • Fry for 2-3 minutes, stirring all the time, then remove from heat.

  • Toast the sourdough and top with greens, chickpeas with chorizo and halved eggs.

  • Season with chilli flakes, salt &pepper. Seasoning is optional, remember there is quite a bit of salt already from the chorizo.
