Beef / Chicken / Soya/ Paneer/ Seafood Stir Fry (Serves 4)

400g strips of lean chicken breast
2 medium carrots julienned
1 medium onion sliced
1 cup green beans julienned
1 cup coarsely shredded cabbage (green and red)
1 cup mixed sliced peppers (green, red, yellow)
1 cup sliced mushrooms
2-3 teaspoon olive oil
½ – 1 teaspoon crushed garlic
4-teaspoon soy sauce
½ teaspoon paprika
black pepper
salt for taste

Method

  • Using a non-stick pan, sauté onion, crushed garlic and a hint of fresh ginger in olive oil.

  • Add strips of beef / chicken, soy sauce and paprika. Allow to brown slightly on medium-to-high heat.

  • Add sliced vegetables. Stir-fry until meat is cooked and vegetables are crisply done.

  • Season with black pepper, coriander and herbs of your choice.

  • Try adding baby corn spears or a dash of chilli sauce for a variation.

  • Serve on rice or pasta and with salads.
